i could have easily named these cookies "ooey-gooey double-chocolate glories." or maybe "double-chocolate-pudding-melty-magisties." or even "punch you in the face chocolate cookies."
i don't know. all i know is that these chocolate bookies with chocolate chips are my husband's favorites.

outrageous chocolate cookies
ingredients:
- 8 ounces semisweet chocolate, roughly chopped
- 4 tablespoons unsalted butter
- 2/3 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt (i might have over-done it here to an almost full teaspoon)
- 2 large eggs
- 3/4 cup packed light-brown sugar
- 1 teaspoon pure vanilla extract
- 1 bag of semisweet chocolate chips
get your ingredients together and preheat your oven to 350* F.
side note: i felt just like charlie bucket with a golden ticket as i unwrapped the magical Ghiradelli chocolate bar ;)
chop the chocolate roughly, empty it into a bowl, and microwave it with the butter in 20-second increments--- being sure to stir after every increment. do not overheat the chocolate. the 20-second increments and the stirring are extremely important--- overheated chocolate will become hard, grainy, and solid melt until smooth! set aside and let cool a little (but obviously not get so cool that it firms up again).
In a large bowl, beat the eggs, brown sugar, and vanilla on high speed until light and fluffy. (give your mixer a good 2-4 minutes to really beat it well!). Reduce speed to low; beat in melted chocolate. Mix in flour, baking powder, and salt until just combined. Carefully stir in the chocolate chips. :)
drop heaping tablespoons of cookie dough 2 to 3 inches apart onto baking sheets, lined with parchment paper or a Silpat. (GOLLY i love my Silpat!)
note: the first time i made these cookies, my first cookie sheet turned out a little differently than the following cookie sheets. i think as the batter had time to sit around... its composition kind of changed. the *second time* i made this recipe... i had 3 cookie sheets ready and spooned out all the cookies right away. while the cookies from the 1st batch still tasted *delicious,* the 2nd batch cookies all looked the same. So if you care about looks, make sure you scoop all the dough on your sheets & get 'em ready right away. :)
bake at 350* F. for 12 to 15 minutes--- do not overbake! the magic that lies within these little cookies is their pudding-like-soft center. overbaking will ruin this! if they seem a little mushy to you, it's ok!
take them out of the oven and let them sit on the cookie sheet for a few minutes.
GLORIOUS! run to your kitchen and make these---- you'll be in love! :)
